Cinco de Mayo is a holiday that celebrates Mexico’s ultimate independence from Spain. The 5th day of May was a significant battle in the French-Mexican war, the Mexican troops were largely victorious over French troops, despite being outnumbered. In the US, it’s a holiday associated with Mexican food.
